Animal rearing and food product processing systems may be hampered by less than optimal on farm biosecurity measures, unregulated access to, and use of antimicrobials. This may contribute to elevated levels of infectious disease such as bovine mastitis, and bacterial septicemia in poultry and overall contribute to antimicrobial resistance development. The PhD research topics will be centered on food safety in the production, processing and marketing of poultry and milk products, including practices and quality in animal rearing, and use of antimicrobials and other substances in the food chain. The research carried out by the two PhD candidates should provide new insights that contribute to improving the quality and safety of animal rearing approaches and of products marketed for consumption in Kenya or exported.
